Heat coconut oil in a kadhai (deep pan). Add curry leaves.

Add chopped onion and fry until golden.

Stir in ginger-garlic paste and cook until it smells aromatic.

Add chopped tomato. Cook until it turns soft and pulpy.

Add chilli powder, coriander powder and turmeric, stirring for a minute.

Pour in the coconut milk. Bring to a gentle simmer, not a rapid boil.

Add the prawns. Cook for 5โ6 minutes until they turn pink and opaque.

Season with salt and simmer for another 2 minutes before taking off the heat.
