Instructions

    Clean the lobster thoroughly. Cut it in half lengthwise, keeping the shell attached.

    Mix the melted butter, minced garlic, chilli flakes, lime juice, pepper and salt together.

    Brush plenty of the garlic butter mixture evenly over the lobster flesh.

    Heat your grill or charcoal barbecue until it is very hot.

    Place the lobster halves flesh-side down on the grill. Cook for 4–5 minutes.

    Flip onto the shell side and cook for 5–6 minutes. Spoon the butter mixture over the meat occasionally.

    Check that the meat looks white and feels firm. Take the lobster off the heat.

    Scatter chopped parsley or coriander over the top. Serve immediately with lime wedges.

Stay by the grill because lobster cooks fast and turns rubbery if overcooked. Keep brushing with butter so the meat stays juicy.
