Instructions

    Drain the soaked green gram and rice. Grind them with green chillies, ginger, cumin, salt, and a little water into a smooth batter.

    Add enough water to make a smooth, pourable batter like a dosa (thin savoury pancake).

    Heat a flat griddle or tawa. Rub a little oil over the surface.

    Pour a ladle of batter into the centre. Swirl it outward in a thin circle.

    Scatter chopped onion over the wet batter. Press it down gently.

    Drizzle oil around the edges. Cook until the bottom turns golden and crisp.

    Fold the pancake in half and serve straight away. Serve traditionally with upma (savoury semolina porridge) and ginger chutney.

Chef's tips

Do not soak the moong for more than 8 hours or the batter becomes sticky. A well-seasoned cast-iron griddle makes the crispest pesarattu.

Batter can be refrigerated for up to 2 days in an airtight container.

Best eaten fresh off the griddle; reheating makes it chewy.
