Instructions

Mix the fermented batter with the chopped onion, green chillies, curry leaves, ginger, cumin, rice flour, and salt.

Let the mixture rest for 10 minutes so the rice flour absorbs moisture.

Heat oil in a kadai (deep pan) until it is medium-hot.

Drop small spoonfuls of the batter into the hot oil, a few at a time.

Fry for about 4 minutes, turning occasionally, until golden brown and crisp on all sides.

Lift them out with a slotted spoon and drain on paper.

Serve hot with coconut or ginger chutney.
