Instructions

Put the pork chunks into a heavy pot with water. Bring it to a boil.

Let the pork simmer gently for 20 minutes until it starts to soften.

Add the crushed ginger, garlic and whole green chillies.

Stir in the mustard greens and colocasia leaves if using.

Simmer everything together for 15 minutes. Cook until the pork and greens are completely tender.

Take the pot off the heat. Mash the pork and greens roughly using a wooden masher.

Stir in the crushed perilla seeds and salt.

Put the pot back on low heat for 5 minutes so the flavours blend.
Chef's tips
Use fatty pork belly so the melted fat enriches the mash. Mash it roughly instead of smooth to keep some texture.
