Instructions

    Cook the chopped bacon in a large stock pot until crisp. Take out the bacon and set aside, leaving the grease in the pot.

    Saute the onion in the warm bacon grease until soft.

    Add the diced tomatoes, potatoes, water or fish stock, salt, and pepper.

    Bring the liquid to a boil. Lower the heat and simmer for 30 minutes until the potatoes are almost soft.

    Add the corn and simmer for another 10 minutes.

    Gently add the catfish chunks. Simmer for 10-12 minutes until the fish flakes easily with a fork.

    Stir in the hot sauce and the cooked bacon.
