Instructions

Put the chicken thighs and beef short ribs into a very large stockpot. Pour in enough water to cover them.

Bring the liquid to a boil on the stovetop. Lower the heat to a simmer and scoop off any foam.

Add the bay leaves, salt, and pepper. Simmer the meat for about 2 hours until it is very tender.

Take out the meat and let it cool slightly. Shred the meat into bite-sized pieces, throwing away bones and extra fat.

Put the shredded meat back into the pot. Add the onion, cabbage, carrots, potatoes, rutabaga, and diced tomatoes.

Simmer uncovered for another 1.5 to 2 hours, stirring occasionally. Cook until the vegetables soften and the stew thickens.

Taste the stew. Add more salt and pepper if you like.

Ladle the hot stew into large bowls and serve.

Booyah (a traditional thick Midwestern stew) is cooked low and slow for hours to break down the meat. It tastes even better the next day.
