Instructions

Smoke the pork pieces on a rack over an open wood fire for about 20 minutes until lightly charred. Or, use a stovetop smoker.

Heat the mustard oil in a heavy pot. Add the dried red chillies.

Add the crushed ginger and garlic. Fry them briefly.

Add the smoked pork pieces. Fry them for 5 minutes to brown the meat.

Pour in enough water to just cover the meat. Cover and simmer gently for 25–30 minutes until tender.

Stir in the ground sesame paste and chopped local herb. Simmer for another 5–8 minutes until the gravy thickens.

Season with salt. Serve hot with rice.
Chef's tips
If open-fire smoking is not possible, use a stovetop smoking box with wood chips. Toast the sesame seeds gently so they do not turn bitter.
