Instructions

    Place the mixed dried fruit and brown sugar into a large mixing bowl.

    Pour the hot black tea over the fruit and sugar.

    Stir well, cover the bowl with a clean tea towel, and leave to soak overnight.

    Preheat your oven to 160°C (140°C fan) and line a 900g loaf tin with greaseproof paper.

    Add the beaten egg and orange zest to the soaked fruit and stir thoroughly.

    Sift the self-raising flour and mixed spice into the fruit mixture.

    Fold gently with a wooden spoon until no dry pockets of flour remain.

    Spoon the thick batter into the prepared loaf tin and level the top.

    Bake on the middle shelf for 70 to 75 minutes until a skewer inserted comes out clean.

    Brush the warm honey over the top of the hot loaf for a glossy crust.

    Leave the loaf in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Soaking the fruit overnight is essential so the loaf stays moist without needing added fat in the batter. If the top browns too quickly during baking, cover the tin loosely with a sheet of foil for the final 20 minutes.
