Stir the blue cornmeal constantly in a dry saucepan over medium heat for 3–4 minutes. Cook until it smells fragrant and looks slightly darker.

Whisk in 1 cup of cool water. Stir until you have a smooth paste with no lumps.

Add the remaining water, the cinnamon stick, and a pinch of salt. Whisk well to combine.

Bring to a gentle simmer over medium heat, whisking often. Cook 8–10 minutes until thickened into a drinkable porridge.

Take out the cinnamon stick. Stir in honey or piloncillo to taste.

Serve hot in mugs or bowls. Dust with extra cinnamon if you like.
