Instructions
- 1
Preheat your oven to 350ยฐF. Grease two 9-inch cake pans.
- 2
Whisk the flour, sugar, cocoa powder, and baking soda together in a large bowl.
- 3
Warm the Cheerwine and half the butter in a saucepan until melted. Let it cool slightly.
- 4
Beat the eggs and buttermilk into the dry ingredients. Add the warm Cheerwine mixture and mix until smooth.
- 5
Divide the batter evenly between the prepared pans. Bake for 30-35 minutes until a toothpick comes out clean.
- 6
Cool the cakes completely on a wire rack.
- 7
Beat the remaining butter, powdered sugar, and a splash of Cheerwine together to make the frosting.
- 8
Spread frosting between the cake layers. Cover the top and sides of the cooled cake with the remaining frosting.
Chef's tips
Simmer some Cheerwine on the stovetop to concentrate it before adding it to the frosting for a stronger cherry flavor. Make sure the cake layers are completely cool before frosting so the icing does not melt.
Storage
Store covered at room temperature up to 3 days, or refrigerate up to a week.
Reheating
No reheating needed; serve at room temperature.
Common mistakes to avoid
- โขBaking the cake too long, which makes the layers dry.
- โขFrosting the cake while it is still warm, making the frosting melt and slide.
