Instructions

Dissolve the jaggery in warm water. Pour it through a strainer to remove any bits.

Mix the rice flour, fennel seeds and salt together. Knead in the jaggery water to make a soft, pliable dough.

Cover the dough with a damp cloth. Let it rest for 15 minutes.

Divide the dough into small balls. Gently flatten each ball into a thick disc using your palms.

Heat oil over medium heat in a kadai (deep curved pan).

Slide in the discs and fry on medium-low heat. Turn them occasionally until golden and crisp on the outside.

Drain the discs on kitchen paper. Let them cool slightly before serving.
Chef's tips
Fry on medium-low heat so the centre cooks through before the outside browns too fast. Rest the dough well so the discs do not crack while shaping.
