Instructions

Roast the sesame seeds in a heavy pan without oil on low heat until lightly golden and nutty. Set them aside.

In the same pan, melt jaggery (unrefined cane sugar) with water on low heat. Cook until a drop stretches into a single thread between your fingers.

Stir in the dry ginger powder, cardamom powder and a pinch of salt.

Add the roasted sesame seeds and crushed peanuts to the syrup. Mix everything quickly and thoroughly.

Grease a plate or banana leaf with ghee (clarified butter).

Pour the hot mixture onto the greased surface. Flatten it using a greased rolling pin or spatula.

While it is still warm, cut shallow lines across the surface to mark out squares or discs.

Let the sweet cool completely. Break the pieces apart and store them.
Chef's tips
Work quickly once you add the sesame seeds, because the jaggery sets fast as it cools. Test the syrup by dropping a little into cold water; it should form a soft, chewy ball.
