Instructions
- 1
Place a tall glass in the freezer for a few minutes to chill it.
- 2
Pour the cold milk into the glass.
- 3
Add the chocolate syrup. Stir briefly to mix it with the milk.
- 4
Hold a long spoon in the glass. Pour the seltzer in a strong stream to build bubbles and foam.
- 5
Stir quickly and hard with the spoon. Stop when a thick white foam rises to the top.
- 6
Serve right away with a straw while it is still fizzy.
Chef's tips
Use fresh seltzer from a bottle or siphon instead of flat club soda. Strong bubbles are needed to create a tall, foamy top.
Storage
Best made fresh and consumed immediately; does not store.
Reheating
Not applicable; served cold.
Common mistakes to avoid
- โขUsing flat soda water instead of fresh seltzer, which ruins the foam.
- โขStirring too gently, which stops the drink from building its thick white foam head.
- โขUsing premade chocolate milk instead of syrup and milk, which changes the flavor balance.
