Instructions

    Cut the kernels off the cobs into a bowl. Scrape each cob with the back of your knife to collect the milk.

    Melt the butter in a cast-iron skillet. Cook the onion, bell pepper, and celery over medium-low heat for 8 minutes.

    Add the garlic and tomato. Cook for 3 minutes.

    Stir in the corn with its milk. Cover and cook over low heat for 15 minutes, stirring every few minutes.

    Add the cream and cayenne. Cook for 5 minutes more until thick.
