Instructions

    Rinse the live crawfish in clean water until the water runs clear. Throw away any crawfish that are not moving.

    Fill the pot two-thirds full with water. Add the seasoning, lemons, garlic, onions, and liquid boil, then bring to a rolling boil.

    Add the potatoes and cook for 10 minutes. Add the sausage and corn, then cook for 5 minutes more.

    Lower the crawfish in the basket into the pot. Bring the water back to a boil and cook for exactly 3 minutes.

    Turn off the burner and add a bag of ice. Let everything soak for 20 to 30 minutes, tasting a tail every 10 minutes.

    Lift the basket and drain the liquid well. Pour everything out onto a newspaper-covered table.

Turn off the burner before soaking and drop in a bag of ice. Cooling the water helps the crawfish soak up the seasoning.

Peel leftover tails and refrigerate up to 2 days, or freeze with a little of the fat.
