Instructions

Melt half the butter in a skillet over medium heat. Cook the onion and peppers until softened, about 4 minutes.

Add the diced ham and cook 2 more minutes to warm through. Remove the filling and set it aside.

Whisk the eggs with salt and pepper until fully mixed.

Melt the remaining butter in the skillet and pour in the eggs. Tilt the pan to spread them evenly.

Cook over medium-low heat while gently pulling the edges inward. Stop when mostly set but still slightly wet on top.

Spoon the ham and pepper filling and cheese over half of the omelet.

Fold the empty half over the filling. Slide the omelet onto a plate.
