Fill a large outdoor kettle with water. Bring it to a rapid, bubbling boil over an open fire.

Add a generous amount of salt to the water.

Put the potatoes and onions in a wire basket and lower it into the boiling water. Cook for about 20 minutes.

Lower a second wire basket with whitefish steaks into the same water. Cook for 10 more minutes.

For the traditional finish, carefully flare the fire beneath the kettle so the water boils over. This carries away floating fish oils.

Carefully lift the baskets of fish, potatoes, and onions out of the water.

Serve right away with melted butter and lemon wedges.
