Instructions
- 1
Whisk the flour, sugar, baking powder, salt, and cardamom together in a large bowl.
- 2
In another bowl, whisk the egg yolks, buttermilk, and melted butter. Stir this into the dry ingredients until just mixed.
- 3
Beat the egg whites until soft peaks form. Gently fold them into the batter.
- 4
Heat an aebleskiver pan over medium heat on the stovetop. Add a small amount of butter to each well.
- 5
Fill each well about two-thirds full with batter.
- 6
Cook for about 2 minutes until bubbles form and edges set. Use a skewer or knitting needle to turn each ball a quarter turn.
- 7
Keep turning every minute to form a round ball. Cook 6 to 8 minutes total until golden and cooked through.
- 8
Dust with powdered sugar. Serve warm with raspberry jam for dipping.
Chef's tips
Turn the aebleskiver slowly and patiently so the batter flows into a round ball. Keep the burner on medium heat so the outside does not brown before the inside cooks.
Storage
Refrigerate leftovers in an airtight container for up to 2 days.
Reheating
Reheat in a 300ยฐF oven for 5 to 8 minutes.
Common mistakes to avoid
- โขOverfilling the wells, which makes the pancake balls hard to turn.
- โขTurning them too early before the edges set, which causes runny batter to leak out.
