Heat your oven to 200°C (180°C fan).

Push slivers of garlic and sprigs of rosemary firmly into each incision.

Rub the olive oil, sea salt, and black pepper evenly over the lamb skin.

Place the halved onions and thyme sprigs into the base of a roasting tin.

Rest the seasoned lamb leg directly on top of the onions.

Roast in the oven for 20 minutes to brown the crust.

Lower the oven temperature to 170°C (150°C fan).
