Instructions

  1. 1

Put the curd into a large bowl. Whisk or churn with a madhani (traditional wooden churner) until smooth.

  2. 2

Slowly pour in chilled water while churning until the drink is light and thin.

  3. 3

Add the roasted cumin powder, black salt, salt and chopped mint. Whisk well to combine.

  4. 4

Churn quickly once more until the top becomes nice and frothy.

  5. 5

Pour into glasses and serve chilled straight away.

Chef's tips

Always churn in one direction to create a good froth. Adjust the water to make the chaas as thick or thin as you like.

Ingredient substitutions

  • fresh minta pinch of dried mint powder

Storage

Best consumed fresh; can be refrigerated for a few hours only as it separates on standing.

Reheating

Not applicable; served cold.

Common mistakes to avoid

  • Using very thin curd, which leaves the drink watery and weak in flavour.
  • Leaving out the roasted cumin, which gives the drink its signature flavour.

Serving suggestions

Serve chilled alongside any spicy meal, especially on hot summer days.
