Warm the red and green chile sauces in separate small saucepans over low heat.

Heat 1 tablespoon of oil in a skillet. Fry each tortilla for about 20 seconds per side until soft with crisp edges, then keep warm.

Add the remaining oil to the skillet. Fry the eggs how you like them, traditionally sunny-side up.
