Heat the olive oil in a wide, heavy-bottomed saucepan over medium heat.

Add the sliced onion and garlic, cooking gently for five minutes until soft and fragrant.

Stir in the aubergines and bell peppers, cooking for five minutes until they begin to soften.

Add the courgettes, chopped tomatoes, and fine sea salt, stirring well to combine.

Reduce the heat to low, cover the pan, and simmer gently for thirty minutes.

Uncover the pan and simmer for ten more minutes until the vegetables are tender and sauce thickens.

Remove from the heat, stir through the torn basil and oregano, then rest before serving.
Chef's tips
Cut the vegetables into uniform pieces so they soften at roughly the same rate. Cianfotta improves markedly after resting for a few hours, allowing the olive oil and vegetable juices to meld.
