Sauté the minced pancetta in a heavy pot over medium heat until the fat renders.

Melt butter in a saucepan, whisk in flour for one minute, then slowly whisk in the remaining milk.

Cook the béchamel until smoothly thickened, seasoning with salt and a pinch of grated nutmeg.

Blanch fresh green pasta sheets in boiling salted water for thirty seconds, then lay flat on clean tea towels.

Smear a thin film of béchamel and ragù over the base of your baking dish.
