Instructions

    Whisk the rye flour, white flour, bruised caraway seeds, and fennel seeds together in a large bowl.

    Pour in the yeast mixture and remaining water, then mix until a rough, sticky dough forms.

    Sprinkle over the fine salt and work the dough with wet hands for 5 minutes.

    Cover the bowl with a damp cloth and leave to ferment in a warm spot for 90 minutes.

    Turn the sticky dough onto a well-floured board and gently shape it into a tight, round loaf.

    Place the loaf seam-side down onto parchment paper and prove for 30 minutes until puffy.

    Preheat your oven to 220 degrees C with a baking sheet or stone set on the middle shelf.

    Dust the loaf lightly with rye flour and slash the top with a sharp knife.

Chef's tips

Rye dough contains very little gluten, so it will feel much stickier than standard wheat dough. Do not add excessive extra flour, which makes the crumb heavy and dry. Let the bread cool for several hours before cutting so the internal crumb sets properly.
