    Sift the flour and baking powder into a large mixing bowl with the salt and caster sugar.

    Rub in the softened butter with your fingertips until the mixture resembles fine breadcrumbs.

    Add the eggs and lemon zest, mixing gently to form a soft, smooth dough.

    Wrap the dough in baking parchment and rest in the fridge for thirty minutes.

    Preheat the oven to 180C (160C fan) and line a baking tray with baking parchment.

    Roll the chilled dough between two sheets of parchment into an oblong five millimetres thick.

    Transfer the log seam-side down to the baking tray and brush the top with beaten egg glaze.

    Scatter the pearl sugar over the surface and bake for thirty-five minutes until deep golden brown.

    Cool completely on a wire rack before slicing diagonally into thick fingers.

If authentic mostarda bolognese is unavailable, choose a dense, tart plum or damson jam to avoid boiling over. Roll the dough evenly so the pastry cooks through without becoming soggy from the fruit preserve. Let the pinza cool entirely before slicing to prevent the filling from spilling out.
