Melt the lard in a heavy lidded pot over medium heat.

Add the sliced onions and cook gently for twenty minutes until completely soft and pale golden.

Stir in the tomato paste and fry for one minute until fragrant and slightly darkened.

Remove the pot from the heat and stir in the sweet paprika quickly so it does not scorch.

Pour in the vinegar and a splash of hot stock, stirring thoroughly to scrape up the pan base.

Return the pot to medium heat and add the beef, garlic, crushed caraway, marjoram, salt, and pepper.

Add the remaining beef stock until the meat is just barely covered.

Cover with a tight lid, turn the heat to low, and simmer gently for two hours.

Uncover during the last twenty minutes to let the onion-rich gravy thicken to a glossy sauce.
