Instructions

Dissolve the yeast in lukewarm water in a large mixing bowl.

Add the flour, salt, coarsely ground black pepper, and softened strutto (lard).

Knead the dough vigorously for ten minutes until smooth, supple, and elastic.

Cover the bowl and let the dough rise until doubled in size, about two hours.

Roll the risen dough on a floured surface into a large rectangle about one centimetre thick.

Scatter the diced salame, ciccioli, provolone, pecorino romano, and chopped hard-boiled eggs evenly over the dough.

Roll the dough tightly from the long side into a thick cylinder.

Grease a ring-cake tin with lard and arrange the dough log inside, pinching the ends together.

Cover loosely and prove until puffy and risen to the tin rim, about one hour.
