Pat the trout thoroughly dry inside and out using kitchen paper.

Season the belly cavity of each fish lightly with salt and freshly ground black pepper.

Tuck two sage leaves inside the cavity of each trout.

Brush the exterior skin of each fish evenly with olive oil and sprinkle with fine sea salt.

Heat a heavy ridged cast-iron griddle pan over medium-high heat until smoking hot.

Lay the trout on the hot griddle and cook undisturbed for five minutes until skin chars and releases.

Turn the fish carefully with a wide spatula and grill the second side for another four minutes.

Melt the butter in a small pan with the crushed garlic and remaining sage until foaming and fragrant.

Stir a squeeze of fresh lemon juice into the hot bubbling butter and remove from heat immediately.

Transfer the grilled trout to a serving platter, pour the hot sage butter over, and serve with lemon wedges.

Ensure the skin is completely dry before oiling to prevent sticking to the cast-iron griddle. Do not attempt to move the fish during the first few minutes; it will release naturally once the skin forms a crisp crust. Watch the butter carefully as it foams so the sage crisps without scorching.
