Instructions

    Drain the soaked rice. Grind it with water into a smooth, thick batter.

    Leave the batter to rest for 2–3 hours at room temperature to ferment lightly.

    Stir in salt if using. Mix everything thoroughly.

    Hold the leaves over an open flame briefly until they soften and bend easily.

    Spoon some batter onto each leaf. Fold the leaf tightly into a secure parcel.

    Place the parcels inside a steamer basket over boiling water.

    Steam for 20–25 minutes until the batter is cooked and firm.

    Unwrap the parcels while warm. Serve them plain or with a savoury side dish.

Chef's tips

A short resting time gives pudo a mild tang. Do not leave it too long or it turns too sour. Turmeric leaves add a lovely gentle fragrance.
