Mix rice flour with a pinch of salt. Slowly add hot water and knead into a smooth, soft dough.

Cover the dough and let it rest for 10 minutes.

Mix roasted ground black sesame with grated jaggery (unrefined cane sugar) until the filling holds together.

Grease a banana leaf. Roll the dough out thinly on the leaf into a flat rectangle.

Spread the sesame and jaggery filling evenly over the rolled dough.

Use the banana leaf to help you roll the dough tightly into a log.

Wrap the rolled log securely in more banana leaf.

Steam the wrapped roll for 25 to 30 minutes until firm and cooked through.

Let it cool slightly. Unwrap the leaf and cut the log into round slices to serve.

Roll the dough to an even thickness so every slice has the right balance of filling. Let the roll cool slightly before slicing for neat pieces.
