Mizo Rice Cake (Chhangban)

Instructions

Drain the soaked glutinous rice. Grind it with water into a smooth, thick paste.

Dissolve the jaggery (unrefined sugar) in a little warm water to make a syrup.

Mix the jaggery syrup and a pinch of salt into the rice paste.

Stir in the toasted sesame seeds.

Put a spoonful of the mixture onto each banana leaf square. Fold it into a parcel.

Arrange the parcels in a steamer basket over boiling water.

Steam for 25 to 30 minutes until the cakes turn firm and translucent.

Let them cool slightly and unwrap. Top with grated coconut before serving.
Chef's tips
Make sure the rice paste is thick enough to hold its shape. Wrap the banana leaf parcels tightly so the mixture does not leak while steaming.

Storage
Store wrapped parcels in the refrigerator for up to 3 days.
Reheating
Re-steam for 5 to 10 minutes to soften before serving.
