Instructions

    Put the glutinous rice in plenty of water. Leave it to soak overnight.

    The next morning, drain all the water from the rice thoroughly.

    Mix in a pinch of salt. For a sweet version, stir in grated jaggery (unrefined cane sugar).

    Hold the banana leaves briefly over an open flame. This softens them so they bend easily.

    Place a portion of the soaked rice in the centre of each leaf.

    Fold the leaf tightly over the rice to make a secure parcel.

    Tie or fold the ends firmly so the parcel stays closed during steaming.

    Arrange the parcels inside a steamer basket.

    Steam for 35 to 40 minutes until the rice is fully cooked and sticky.

    Let the parcels cool slightly before unwrapping and serving.

Warm the banana leaves briefly over a flame so they do not tear while folding. Do not overfill each parcel, as the rice expands during steaming.
