Instructions

    Put the glutinous rice in plenty of water. Leave it to soak overnight.

    Drain all the water from the rice thoroughly the next day.

    Steam the soaked rice for 25 minutes until fully cooked and sticky.

    Pound the steamed rice lightly in a large mortar or with a wooden pestle. Keep it slightly textured.

    Mix in a pinch of salt if using.

    Place a portion of the pounded rice on a clean leaf. Shape it into a flat oval.

    Wrap the leaf around the rice. Fold the ends to seal it securely.

    Arrange the wrapped parcels inside a steamer basket.

    Steam the wrapped rice cakes for another 20 minutes until firm.

    Unwrap slightly and sprinkle toasted sesame seeds on top before serving.

Chef's tips

Wet your hands while shaping the rice so it does not stick. Use fresh, bendy leaves so they wrap easily without tearing.
