Instructions

    Trim the brisket point. Leave about a quarter-inch layer of fat on top.

    Mix the salt, pepper, paprika, and garlic powder. Rub it all over the brisket.

    Smoke at 250°F over oak or hickory for about 5 hours. Cook until the inside reaches 165°F.

    Wrap tightly and smoke for another 2-3 hours. Stop when it is fork-tender and reaches roughly 195°F inside.
