Instructions

    Boil the pork in salted water for about 20 minutes until tender.

    Drain the pork and save a little of the cooking liquid. Let the pork cool.

    Finely chop the boiled pork and some of its fat into small pieces.

    Put the chopped pork into a large mixing bowl.

    Add the finely chopped onion, spring onion, ginger and green chillies.

    Season with crushed black pepper and salt.

    Drizzle raw mustard oil over the mixture. Toss well to combine.

    Add a splash of the saved pork stock if the mixture seems dry.

    Squeeze over the lime juice and toss everything again before serving.
