    Warm the milk to about 110°F. Stir in the yeast and a pinch of the sugar, then let it foam 5–10 minutes.

    Mix the flour, remaining sugar, and salt in a stand mixer. Add the yeast mixture, melted butter, and egg yolks until a soft dough forms.

    Knead 6–8 minutes until smooth and slightly tacky. Put into an oiled bowl, cover, and let rise 1 hour until doubled.

    Divide the dough into 16 balls on parchment-lined sheet pans. Cover and let rise 30 minutes.

    Press a deep hollow into the center of each bun. Fill with a spoonful of preserves or cheese filling.
