Instructions

Rinse the smoked wild boar meat in warm water to wash off any excess burnt bits.

Put the meat into a heavy pot. Add the water, ginger, garlic and onion.

Bring the pot to a boil. Cover with a lid and simmer on low heat for 40 minutes.

Check if the meat is tender. Keep simmering if it is still tough, adding more water if needed.

Stir in the chopped king chilli and fermented bamboo shoot if you are using it.

Simmer uncovered for another 15 minutes so the flavours become richer.

Add salt to taste and stir well.
