Instructions

    Toast the sesame seeds on a griddle over low heat. Stir constantly until they turn golden and smell fragrant.

    Let the roasted seeds cool down slightly.

    Toast the dried red chilli briefly in the same pan without oil.

    Grind the sesame seeds, red chilli, and garlic in a mixer. Add water little by little to make a thick paste.

    Transfer the paste to a bowl. Stir in the roasted cumin powder.

    Add the lemon juice and salt. Mix everything together thoroughly.

    Taste the chutney. Add more salt or chilli if needed.

    Serve the fresh chutney with warm rotis (flatbreads).

Roast the sesame seeds slowly and watch them carefully, as they burn quickly. Grind in short bursts to keep a little texture rather than making it completely smooth.
