Instructions

Heat the vegetable oil in a large heavy-based pan over a medium hob heat.

Add the finely chopped onions and salt, cooking for 15 minutes until deep golden brown.

Stir in the garlic paste and ginger paste, cooking for 1 minute until fragrant.

Add the cumin, ground coriander, turmeric, and chilli powder with 2 tablespoons of water.

Fry the spice paste for 3 minutes until dark and oil separates around the edges.

Tip in the diced lamb and stir well to coat every piece in the spiced onion base.

Cook over medium-high heat for 5 minutes until the exterior of the lamb is browned.

Add the chopped tomatoes and slit green chillies, stirring thoroughly to combine.

Reduce the heat to low, cover with a tight lid, and simmer gently for 40 minutes.

Remove the lid and turn the heat to medium-high for 8 minutes to evaporate excess liquid.

Stir in the garam masala and fresh coriander once a glossy oil film separates on top.
