Instructions
- 1
Grate the cucumber and place it in a clean towel. Squeeze out as much liquid as you can.
- 2
Beat the cream cheese in a mixing bowl until it is completely smooth.
- 3
Add the drained cucumber, grated onion, mayonnaise, and lemon juice. Mix everything together well.
- 4
Season with the salt and white pepper. Add a drop or two of green food coloring if you like.
- 5
Cover the bowl and chill in the refrigerator for at least 1 hour so the flavors blend.
- 6
Spread onto thin white bread for tea sandwiches, or serve it as a dip.
Chef's tips
Squeeze as much liquid as possible from the grated cucumber using a clean towel to avoid a watery spread. A little green food coloring gives the classic pale green look, but it is optional.
Storage
Refrigerate in an airtight container up to 4 days.
Reheating
Not applicable; serve chilled.
Common mistakes to avoid
- •Skipping the step of squeezing moisture out of the cucumber, which turns the spread runny
- •Mixing the spread too aggressively until it loses all of its pleasant texture
