Instructions

Heat oil in a small pan over medium heat. Fry the green chillies and garlic for 4-5 minutes until blistered and fragrant.

Let the roasted chillies and garlic cool down slightly.

Crush the roasted chillies, garlic, peanuts, cumin and salt in a mortar and pestle. Keep it rough and chunky, not smooth.

Stir in the chopped coriander leaves.

Drizzle the leftover pan oil over the top and serve immediately.

Change the number of chillies to suit your taste. Using a mortar and pestle gives the best traditional chunky texture.
