Instructions

  1. 1

Season both sides of the pork steaks generously with rub.

  2. 2

Grill over medium-high heat for 4-5 minutes per side until you see dark grill marks.

  3. 3

Move the steaks to a foil pan. Add the sliced onions and a splash of beer or apple juice.

  4. 4

Pour barbecue sauce over the steaks until they are mostly covered.

  5. 5

Cover the pan tightly with foil. Put it back on the grill over indirect heat.

  6. 6

Braise (cook slowly in the liquid) for 45-60 minutes until the meat is very tender and pulls easily from the bone.

  7. 7

Serve the steaks with extra sauce spooned over the top.

Chef's tips

Cooking the meat slowly in liquid after grilling is essential, or the steaks will be tough. Keep the grill heat indirect to keep the sauce from burning.

Storage

Refrigerate in sauce up to 3 days.

Reheating

Reheat gently in a covered skillet with a little extra sauce or water.

Common mistakes to avoid

  • β€’Skipping the braise (cooking in liquid), which leaves the meat chewy
  • β€’Using heat that is too high during braising, which burns the sauce
