Instructions

Shape the ground beef into 4 thick patties. Sprinkle both sides with salt and pepper.

Warm the green chile sauce in a saucepan over low heat while the burgers cook.

Melt butter in a skillet. Toast the cut sides of the buns until they turn golden.

Cook the patties in the same skillet over medium-high heat. Flip after about 4 minutes per side for medium.

Place the bottom bun on a plate and set the patty on top. Place the top bun beside or on it.

Ladle plenty of hot green chile sauce over the entire plate. Cover the burger and bun completely.

Sprinkle shredded cheddar over the top while the chile is still hot so the cheese melts.

Top with sliced onion if desired. Serve right away with a fork and knife.
Chef's tips
A true slopper is meant to be messy, so use plenty of chile sauce. Serve with extra napkins and saltine crackers on the side.

Best eaten fresh; leftover components can be refrigerated separately up to 2 days.
