Instructions

Divide the ground beef into 8 thin, equal patties.

Fold each cheese slice into quarters. Put a folded stack in the center of 4 patties.

Place a plain patty over each cheese-topped patty. Pinch the edges firmly to seal them completely.

Sprinkle both sides of each burger with salt and pepper.

Heat a cast-iron skillet or grill over medium heat.

Cook the burgers for 5-6 minutes per side until well browned. The inside temperature must reach 160Β°F.

Let the burgers rest for at least 5 minutes before serving. The inside cheese stays extremely hot.

Serve the burgers on toasted buns with mustard, onion, and pickles.
