Heat oil in a heavy pot. Fry the garlic and ginger until fragrant.

Add the onion and cook until softened.

Add the pork chunks. Brown them on all sides for 5 minutes.

Stir in the chopped tomato. Cook until it breaks down.

Pour in the water and bring to a boil. Lower the heat and simmer for 20 minutes.

Add the fermented bamboo shoot and green chilli. Stir well.

Simmer for another 15 minutes until the pork is tender and the broth reduces slightly.
