Whisk the flour, baking powder, baking soda, salt, and sugar together in a bowl.

Cut the cold butter into the flour mixture until it looks like coarse crumbs.

Stir in the sourdough starter and enough buttermilk until a rough, shaggy dough forms.

Turn the dough onto a floured surface. Pat it gently into a 1-inch-thick round.

Cut out biscuits with a floured cutter. Place them close together inside a greased Dutch oven.

Cover the Dutch oven with its lid. Place hot coals underneath the pot and on top of the lid.
