Cut the cold butter into the flour and salt. Mix until pea-sized crumbs form.

Add ice water a little at a time and mix until dough forms. Divide in half, wrap, and chill for 30 minutes.

Toss the pitted cherries with sugar, cornstarch, lemon juice, and almond extract if using.

Roll out one dough disc. Fit it smoothly into a 9-inch pie dish.

Pour the cherry filling into the crust.

Roll out the second disc and place it over the filling. You can also cut it into strips for a lattice top.

Trim and pinch the edges to seal. Cut small slits in the top crust if using a solid top.

Bake at 400°F for 20 minutes. Lower heat to 350°F and bake 30-35 minutes more until golden and bubbling.
