Soak the salt pork if very salty, then drain and place in a large stockpot with fresh water.

Bring to a boil, skim any foam, then reduce heat and simmer for 45 minutes.

Add the turnip and carrots and simmer for 20 minutes.

Add the potatoes and onion and simmer a further 15 minutes.

Add the cabbage wedges on top and simmer 15 more minutes, until all the vegetables are tender.

Lift out the pork and vegetables, slice the pork, and arrange everything on a large platter.

Season with black pepper and serve hot, moistened with a little of the cooking broth.
