Instructions

Preheat the oven to 190C (375F).

Cook the onion and celery in half the butter over medium heat until softened.

Combine with the bread cubes, savoury, salt, pepper and enough stock to moisten without making it soggy.

Lay one cod fillet in a buttered baking dish, spread the stuffing over it, and top with the second fillet, or pack the stuffing into a pocket cut in a single thick fillet.

Brush the top with the remaining melted butter.

Bake for 35-40 minutes until the fish flakes easily and the stuffing is heated through.

Rest 5 minutes before slicing and serving.
Chef's tips
If using two thinner fillets, tie or skewer them together so the stuffing stays enclosed while baking.
